What's Cooking - Carrot Banana Muffins -

This recipe is one of our family's favorite - great-grandma to grandkids love them. Found the recipe online a few years back and can't remember where. Had a hard time getting a good picture.

Carrot Banana Muffins



ingredients:
2 cups almond flour
2 t baking soda
1t sea salt
1 T cinnamon
1 cup chopped dates
3 ripe bananas
3 eggs
1 t apple cider vinegar
1/4 cup coconut oil
1 1/2 cups grated carrots
3/4 cup chopped walnuts

Instructions:

Preheat oven to 350 degrees

put eggs, bananas, vinegar and oil into bowl and mix until well blended

add flour, soda, salt and cinnamon and mix some more

mix in dates, carrots and walnuts

I use a large scoop and silicone cupcake pans ( no need for liners or spray)



Bake for about 25 minutes - we like them well done so we bake them for 35 minutes

They will still be really moist so after waiting about 10 minutes before removing them from the pans we turn them upside down to help them dry out a bit more. They are pretty dense and don't rise very much.



Makes 10-12 muffins

We usually make a double batch and freeze some.

I didn't realize that you don't need liners for those silicone pans! We don't have any because my son is horribly allergic to silicone - we found out when he was a baby - he lost his pacifier and I bought him a new silicone one and then he ended up in the ER because his entire mouth/throat swelled so much! So now we know. The DR told us - no chapsticks, lotion with silicone in it, jelly beans, silicone covered pills (to make them easier to swallow), etc. He is even allergic to the seams in his clothes if there is plastic thread in the seam or if the sewing machine was oiled with silicone oil (took us a bit to figure THAT one out!). I guess that is a LONG way to say that I like the looks of that recipe - yum! I am bookmarking it and going to try it once I get back to my regular kitchen! Cheers! Evelyn
